docs: keep the theme.conf.user symlink in the user's home
The install block ran in a root shell, where ~ and $HOME expand to
/root, so the symlink pointed at /root/.local/share/udt and the
greeter silently fell back to theme.conf and the bundled power icons.
Run the block with sudo from the user's shell, and drop the obsolete
LoginCard.qml on upgrade.
