Tagging stops being limited to the five tags someone chose in advance, and
the application admits when your work has not reached the mail store yet.

Ctrl+T opens an Edit tags dialog over the selected threads: type tags to
add or remove, or clear a checkbox to drop one already present. Both fields
complete against every tag in the database, and a tag on only some of a
multi-thread selection shows a partially checked box that changes nothing
unless you touch it.

The status bar counts tag changes a sync has not carried over, and quitting
with changes outstanding asks what to do, controlled by sync_on_exit.
